Refreshing Cucumber Salad

When the cucumbers begin to ripen in my garden, I can’t wait to a make cucumber salad. We often have it for lunch with slices of freshly baked bread, although I might also serve it as a side dish for the evening meal.

Usually I make it with parsley from my garden, which is the original version. Sometimes I make it with fresh dill. Chives would be good, too.

Refreshing Cucumber Salad

For dressing combine:

1 tablespoon olive oil

1 tablespoon lemon juice

2 tablespoon fresh parsley

¼ teaspoon salt

1/8 teaspoon sugar

dash pepper

Slice thin and toss with dressing:

2 medium cucumbers

Yield: 4 servings
